It was a big adjustment, but I thought I could handle it. Then, just a year later, my oldest child was diagnosed too. That moment changed everything. As a mom, my instinct was to protect my child, to make sure he didn't miss out on anything birthday parties, favorite foods or simply the joy of sharing a meal. Little did I know that was just the beginning. Over the years, I discovered that two more of my kids, and even my husband, also had celiac disease.
